These delicious patties can be made by mincing turkey breast, chicken thighs or pork, just make sure you mince with some fat whether it's the skin of the turkey or chicken or pork fat from a chop, you can always ask your butcher to do this for you. They are incredibly tasty and quick to make, my children also love them and they make a great change from a traditional beef burger. Serve with a spicy Thai salad, steamed greens or raw veggies for the kids.
Ingredients - 6 large or 10 smaller patties
800g minced turkey, chicken or pork
3 garlic cloves, minced
1 large red onion, chopped finely
large bunch of coriander, chopped
1 tbsp fish sauce
good pinch of sea salt
Black pepper
2 tbsp coconut oil
Wedges of lime
Method
Combine all ingredients together, I like to use my hands to ensure it's really mixed thoroughly
Make into patties and place on a plate lined with greaseproof paper or baking parchment until you are ready to fry, grill or bbq them
The flavour is even more intense if you leave overnight.
When you are ready, heat the oil in a pan until just smoking, place the patties into the pan and turn the heat down.
Fry each side for a good 5-7 mins, ensuring they are cooked all the way through - they should be golden brown on each side.
If you are cooking under the grill or on the bbq, melt oil gently and then rub the patties in the oil before cooking - these take between 5-8 mins on each side, depending on the size.
Serve with a wedge of lime
