These nutritious burgers are bursting with goodness and a great way to get my boys to eat fish! Super simple and very quick to make. Serve with a coconut & lime yoghurt, my husband and I ate them with steamed broccoli and almond miso dressing, the boys ate them in a pitta with plain broccoli on the side!
Serves 4 – two adults and 2 boys
Ingredients
800g skinned and cubed salmon, preferably Wild Alaskan but any will do
Bunch of spring onions, thinly sliced
Bunch of coriander
2 cloves of garlic grated
1 tbsp fish sauce
I whole egg
Good pinch of sea salt and pepper
Small pot of natural coconut yoghurt – I use Coyo
1 lime – zest and juice
Method
Prepare salmon and throw into blender, pulse until minced
Add coriander, onions, garlic, fish sauce, s&p and egg, pulse until mixed together
Leave in fridge for 1/2hr to firm up.
Make into small burgers and lay onto baking parchment – I got 12 out of my mixture
Melt 1/2 tbsp coconut oil in pan, when hot place the burgers into the pan, turn down the heat – cook until golden brown about 5 mins each side. Burgers should be just firm to the touch.
While they are cooking make the yoghurt dip. Mix the zest and lime juice with the yoghurt, s&p and taste.
Serve with a dollop of yoghurt in pitta or on the side.
N.B mixture can be made the day before needed.
