This is a really simple and delicious way to use up cooked chicken. Almonds are rich in healthy fats, fibre, protein, magnesium and vitamin E. They can help lower blood sugar levels, reduce blood pressure and lower cholesterol levels.

This is gluten, dairy and refined-sugar free.
Satay Sauce
2 tbsp Almond butter - crunchy is best but smooth will work just as well
2 tbsp sweet miso
Good pinch of sea salt
Good pinch of cayenne pepper
1/4 cup of hot water
Mix all ingredients into a jam jar, shake really well until mixed thoroughly - taste, add more seasoning and cayenne if desired.
Shred your cooked chicken
Fold in the sauce
Serve with a crunchy salad and a spicy dressing
