Spicy Turkey in Baby Gems

This is such a quick and simple dish for the whole family plus it looks and tastes fabulous, it is great as a starter or as a main.

As a family we really enjoy Thai food and this recipe is a variation of traditional Thai street food.  My boys love the fact they can eat it with their hands and making their own makes it all the more fun.  They even love the chilli which gives a slight kick to the mince, this can be removed if yours aren’t quite so keen and it still tastes great!

It’s so fresh and perfect for the summer and more importantly it is free from dairy, gluten and refined-sugars.  I hope you enjoy it!

Ingredients

1 tbsp Coconut Oil

2 red onions, finely chopped

650g minced turkey or chicken – I used thigh and breast, we order ours on line from www.athleat.co.uk, excellent free range turkey

2 cloves garlic, peeled and grated

1/2-1 red chilli finely chopped (this is optional)

1 thumb size piece of ginger peeled and grated (organic is best)

Juice and grated zest of 2 limes

3 tbsp Thai fish sauce

1-2 tsp raw honey

3 baby gem lettuce, leaves washed and separated

1 small bunch of coriander, roughly chopped

Handful of unsalted peanuts lightly toasted in a frying pan, chop roughly and set aside

Method

In a large frying pan melt the coconut oil and fry the red onions for approx 5 mins

Turn the heat up and add the turkey mince cooking for 5-10mins breaking up the meat so there are no lumps

Cook until juices have cooked away and the mince starts to brown

Add the garlic, ginger, chilli (if using), zest, fish sauce and honey.  Stir through well.

Add 1/2 the lime juice and taste, you can always add more fish sauce and lime if you would like

Sprinkle with coriander and nuts, serve in a bowl for the whole family to assemble themselves!
