Tahini really is a wonder ingredient, it’s rich in minerals such as phosphorus, lecithin, magnesium, potassium and iron. It’s a good source of Methionine, which aids in liver detoxification – perfect for January detox. It’s high in vitamin E and vitamins B1, B2, B3, B5 and B15. It can help to promote healthy cell growth and maintain healthy skin and muscle tone. It has 20% complete protein, making it a higher protein source than most nuts. It’s easy for your body to digest because of its high alkaline mineral content, which is great for assisting in weight loss. It is also high in unsaturated fat (good fat!)
You can add it to almost anything sweet and savoury but one of my recipes staples is Tahini dressing. It is so easy to make, keep a jar in your fridge and luz it on everything you eat!
3 tbsp Tahini
2 clove garlic, grated or crushed
good pinch of sea salt
1 juice of lemon
1 cup boiling water
Place everything in a NutriBullet or blender and mix together, taste – add more salt or lemon if desired.
Keeps in a kilner jar for a week to 10 days. If gets too thick just add more hot water.
