I love Quinoa because it’s super tasty and packs a nutritional protein punch when the family is being more veggie. It also makes a great alternative to couscous (which is full of gluten) when serving a Tagine or when you want to replace rice when cooking a stir fry. It can however be tricky to cook and turn out all sludgy when it should be light and fluffy – here is my recipe to cook quinoa perfectly every time.
I tend to make enough for 2 family meals as it keeps really well in an air tight container.
Rinse 2 cups of quinoa in a sieve then place in a pan which has a lid.
Cover with 31/2 cups of water and good pinch of salt.
Bring the water to the boil, as soon as bubbling put lid on, turn down heat and simmer for 12-14mins.
Turn heat off and place a piece of kitchen roll between the lid and pan and leave to sit for about 5-8mins.
When your ready fork through and serve.
