This Vegan New York Baked cheesecake is an absolute knock out and you would be hard pushed to know that it is vegan. It's insanely creamy, perfectly sweet, slightly citrusy and tangy, rich, satisfying and so like the real thing. The base is made from gluten free rolled oats and raw almonds giving it a real digestive biscuit crunch and the creamy topping uses raw cashews and vegan cream cheese. Serve on it's own or with a fruit coulis - yummy.
Serves 8-10 people - it's rich so you don't need a huge slice!
