BANANA BREAKFAST PANCAKES

PEACE OFFERING - Banana & Oat Breakfast Pancakes 


The boys were fighting like wild animals this morning so I decided to make them a peace offering of banana pancakes with spiced apples.  It placated them for a while but sure enough they had each other in a headlock before the last mouthful was finished! 

They are so ready to go back to school ????

Banana Pancake recipe
150g GF Oats 
1 tbsp milled hemp
1tsp baking powder
1/2 tsp bicarbonate of soda
Pinch of Himalayan salt
4 over ripe bananas
1tsp vanilla essence
1/2 cup hemp milk (or any diary free alternative) 

Method
Place the oats into a blender and whiz until flour like texture, pour into a bowl.

Add the baking powder, bicarbonate of soda and salt and mix well.

Add the bananas, essence and hemp milk to the blender and whiz until smooth.

Pour the wet mixture into the dry and stir well. Set aside for 15mins.

In a large frying pan heat a tsp of oil and spoon in the mixture.

You have enough batter to make 10-12 mini pancakes.

Serve with berries, spiced apple compote, maple syrup or chocolate sauce
