This tomato sauce recipe can be used on it's own, you can steam fish in it, add spicy stir fried prawns into it, add to meatballs, soups , the list goes on - it is a real winner and is delicious! It is a perfect winter warmer, flu fighter, anti ager and immune booster because it is packed full of great ingredients turmeric, garlic, ginger, coconut oil and tomatoes.
Serves 4
1 red onion, diced small
2 cloves, grated or diced
2 inches grated fresh ginger (ideally organic)
2 inches grated fresh turmeric or 1tsp ground turmeric
1 tin of organic tomatoes or 500kg fresh tomatoes chopped or bottle of passata
1tbsp coconut oil
sea salt & pepper
Method
Melt oil and add, onion, garlic, ginger and turmeric - sweat until softened
Add tomatoes and cook for 15-20 mins until sauce becomes thick and rich in colour
Add salt and pepper and taste
To add a little bite you can always use fresh or crushed chilli flakes. If you are using with fish add a good sqeeze of lemon. You can always add coconut yoghurt and fresh coriander to make a delicious prawn curry
