The kids requested tomato soup the other day for lunch so I decided to make some fresh for the whole family to enjoy while throwing in a few extra immune boosting ingredients!
This is super quick to make and extremely nutritious – tomatoes are packed full of lycopene which is anti-ageing, garlic which has anti-bacterial properties and fresh turmeric super high in antioxidants – what’s not to like about that! Thankfully they loved and we looked younger eating it!
Ingredients
1 onion chopped
2 cloves garlic, smashed
1inch turmeric, grated
6 tbsp olive oil
4 large tomatoes (cut in to 6)
1tsp smoked paprika
handful of basil
Method
Sweat all together in pan for 10mins
Add can of cherry toms, sea salt and pepper. Cook for a further 15mins.
Whiz in blender.
Serve with crusty bread – the boys had cheddar cheese sandwiches, we had my homemade turmeric loaf.
