Coconut Rice in a jiffy!

I always cook too much rice, even after all these years of cooking that’s still one thing I can’t get right and always over cater! Here is a great way to tszuj up your rice.

Serves 4

Ingredients

3 cups of cooked rice (I always use basmati)

1 onion (red or white) thinly sliced

1 clove garlic sliced

3 tbsp olive oil

1/2 tsp turmeric

1 small can of Coconut cream

1 bay leaf

Method

Heat the oil in heavy based pan with a lid

Fry the onions and garlic until golden in colour

Add turmeric, stir and then add the coconut cream

When mixed through and bubbling add the rice and stir well.

Add the bay leaf, pop the lid on and leave on a low heat until ready to serve.
