Omega Packed Breakfast Bars

These gluten, dairy and refined sugar free bars are a great way to start the day, packed full of essential fatty acids and vegan protein.

Ingredients

1 cup buckwheat Flakes

1/2 cup Quinoa Flakes

2 tbsp Sunflower Seeds

2 tbsp Chia Seeds

2 tbsp Flax Seeds

2 tbsp Pumpkin Seeds

1/2 cup coconut oil

3 tbsp Coconut Blossom Syrup

80g apple sauce

Grated zest of one lemon

Good pinch of Himalayan Salt

Method

Heat oven at 180°c and line a loaf tin with greaseproof paper

Melt coconut oil over gentle heat and whisk in coconut blossom syrup and apple sauce

Mix dry ingredients together and lemon zest

Combine dry and wet ingredient and stir until mixed well.

Press into prepared tin and bake for 20 minutes or until golden brown andn the air is fragrant

Cool, slice and enjoy
